[Blessings of the Earth] A beer that captures the essence of Aomori ingredients

[Gifts of the Earth] Beer Flavored by Aomori's Ingredients

Our challenge, which began with preserving local language, eventually expanded into a bond with the farmers who support the rich land of Aomori. We don’t just promote "local production for local consumption"; we aim to maximize the potential of the unique ingredients specific to this region. From the vast history of the many beers we have brewed across Aomori using local ingredients, here are five representative examples.

🌾 Local ingredients we have used (examples)
Rice Brown rice Sake lees Dake-kimi (Corn) Assorted apples Ripe melon Quince Steuben (Grapes) Western pear Peach Blackberry Cassis Pumpkin Shimizumori-nanba (Chili pepper)
📍 Kuroishi City: Brown rice

Mamma Lager

Named after "mamma" (rice/meal), the foundation of Tsugaru food culture, this is a clean and incredibly drinkable craft lager. By using high-quality brown rice harvested locally in Kuroishi City, we have achieved a flavor profile where a light, crisp mouthfeel is exquisitely harmonized with a subtle, fragrant depth and complex nuances of rice.

📍 Hirosaki City: Shimizumori-nanba

Nanbakeshon

A super-exclusive late-summer spice saison developed for the ABA Program Festival. To realize the idea of "adding Shimizumori-nanba!", we added salt and lime to achieve an exquisite balance. This is a very challenging brew featuring the refreshing citrus notes of salt and lime, accented by the spicy tingle of chili pepper as it passes through the nose.

📍 Hirakawa City: Steuben grapes

Aomori Ale with Hirakawa City Steuben Grapes

A fruit ale born from a request by Steuben grape farmers in the neighboring town of Hirakawa. We used a luxurious ratio of 70% of our classic, popular "Aomori Ale" base combined with 30% delicious Steuben grape juice. While it boasts a beautiful color and the refreshing, rich aroma unique to Steuben, it is not overly sweet, offering a dry, clean, and superb finish.

📍 Sannohe Town: Western pear

Rock de Nashi

A beer luxuriously brewed with a blend of six different varieties of Western pears from Sannohe Town, located in the southern part of Aomori Prefecture. We have expertly combined the juicy sweetness, elegant aroma, and delicate acidity inherent in each variety to create a beer where the rich character of the pear can be felt directly.

📍 Aomori City: Cassis

Aomori Cassis (Black Currant Ale)

A vibrant and extremely drinkable fruit ale featuring Aomori cassis, which boasts the highest production volume in Japan. The moment it is poured into a glass, the powerful berry aroma characteristic of cassis spreads, and upon drinking, one can enjoy a very refreshing, clean, and crisp finish with bright acidity.

💬 Collaborating with local farmers and expressing the character of their land in a single glass is the most exciting and enjoyable time for us in our brewing process.
