"Dosa! Yukkosa!" (a Tsugaru dialect phrase meaning "Where are you going? To the bath!") is our latest West Coast IPA, and the perfect pint for right after a hot soak!

For this dry IPA, we stepped outside our usual, classic brewing approach. While we based it on traditional American C-hops—Columbus, Centennial, and Comet—we added Cryo Mosaic, Motueka, and Simcoe. New Zealand-grown Motueka serves as a magnificent bridge between the classic C-hops and modern fruit-forward hops, resulting in an exquisite harmony of traditional pine, citrus, and floral aromas with contemporary juicy, fruity notes.

The malt base is centered on Pilsner malt, blended with just a hint of wheat and caramel malt. This creates a clean, crisp structure that gently supports the powerful bitterness and aroma of the hops.

We fermented it "slow and low" at a low temperature to polish the finish until it was impeccably clean. Please enjoy this incredibly crisp pint that lets the allure of the hops take 100% of the spotlight!

"Dosa! Yukkosa!" (a classic Tsugaru dialect exchange meaning "Where are you going? To the bath!") is our latest West Coast IPA—and the absolute ultimate brew to crush after a hot soak.

We took a unique turn with this dry IPA. While we usually stick to traditional American hop profiles, this time we blended the classic foundation of Columbus, Centennial, and Comet with Cryo Mosaic, Simcoe, and Motueka. The Motueka acts as a perfect bridge between the traditional resinous C-hops and the juicy modern fruit character, creating a dynamic blend of pine, citrus, floral notes, and bright tropical aromatics.

We built a simple, crisp grain bill using a Pilsner malt base with just a dash of Wheat and Caramalt to provide subtle balance against the assertive hop bill.

Fermented "slow and low" for an exceptionally clean finish, the malt and yeast step back completely to let the hops take full control of the spotlight.
