"Lilikoi" is a very special American IPA that holds deep meaning for our owner and brewer, Gareth.

When Gareth visited a hop farm in New Zealand, it was the first time he followed the entire transformative process of a hop with his own nose and senses: from the lush green state before harvest (scenting like overripe passion fruit) to the drying kiln (sweet Valencia orange), after drying (a fusion of passion fruit and orange), immediately after pelletization, inside our own tanks (like pure passion fruit juice!), and finally, in the finished beer.

The hop used is an experimental New Zealand variety from Freestyle Hops called "NZ02 (Lillikoi)." It is a super rare hop, with only one box imported into Japan! To ensure you can experience 100% of the potential of this precious new hop, we stripped the recipe down to its absolute simplest form.

We used only pale Pilsner malt for the base and adopted the clean-fermenting "LAX" yeast. For the hops, we mixed in absolutely no other varieties, brewing it as a single-hop IPA using only "NZ02." This is a state-of-the-art variety that even most American breweries haven't had the chance to use, and one that beer fans around the world have hardly had a chance to taste.

The finished beer features a complex and wonderful aroma, with an exquisite harmony of dense passion fruit and sweet, ripe orange. We are proud to be able to deliver this special experience to everyone in Japan!

"Lilikoi" holds a deeply personal significance for Gareth. It marks the very first time he was able to follow a hop variety's entire journey firsthand—smelling it on the vine before harvest (overripe passion fruit), in the kiln (sweet Valencia orange), after drying, right after pelletizing, inside our fermentation tank (pure passion fruit juice), and now in the final beer.

The star of this brew is "NZ02" (Lillikoi), an experimental variety from Freestyle Hops. We secured the only box of this hop that was imported into Japan. Because it is such a rare and cutting-edge variety, we wanted to ensure every single person who gets a glass can experience its unadulterated character.

To do that, we kept the recipe hyper-simple: a clean Pilsner malt backbone, WHC Lab LAX yeast for a neutral fermentation, and 100% NZ02 hops used exclusively from start to finish. Most breweries in America haven't had the chance to brew with this strain yet, and very few craft beer drinkers in the world have tasted it.

The finished beer reveals a beautiful, complex balance of vibrant passion fruit and sweet, juicy orange. We are thrilled to bring this rare hop experience to Japan, and we can't wait to see how this variety develops in the future!
